Spicy Chipotle, Orange & Rosemary Cranberry Sauce

When you want to add a kick to your cranberry sauce with a hint of orange to wake up aunt Edna's bland and flavorless turkey, this is your sauce!

Ingredients

  • 12 oz fresh cranberries
  • 1 cup orange juice
  • 1 zest from 1 orange
  • 1 cup sugar
  • 3 tsp fresh rosemary, minced
  • 1 to 2 chipotle chilies in adobo, chopped fine
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. In a medium sauce pan Bring orange juice, sugar, rosemary and chipotle chilies to a boil (start with one chopped chipotle, if you want it spicier, you can add the second one or more later, taste it once done) I added 2 and it was fine for me

  2. Add cranberries, salt and pepper and stir

  3. Reduce heat to a low boil for 10 minutes, stirring occasionally; the cranberries will start splitting when done
  4. Let cool, pour into covered container and refrigerate until ready to serve.
  5. Yield: 2 ½ cups
