These savory & smoky beans can be simmering in your slow cooker revealing creamy goodness by dinner time
Soak the beans overnight in a large bowl of water, drain, rinse and place them in a slow cooker
Add olive oil to a skillet over medium/high heat and saute the carrots, onions, celery and garlic for 4 minutes and transfer to the slow cooker with the beans
Add 6 cups of water and turn slow cooker on high
Add the remaining ingredients and cook for 6 to 8 hours or until the beans are very tender
Enjoy topped with your favorite items like salsa or corn chips
A great party idea is to serve these on a buffet right in the slow cooker with many bowls of toppings for your guests to pick and choose from. This recipe is vegan but if you want to please all your party guests, put toppings out like cheese, sour cream, crumbled bacon, chopped tomatoes, chopped onion...etc.
