S'more Cookie Mix

This rich chocolaty brownie based cookie is definitely reminiscent of the campfire classic but without the fuss.

Ingredients

  • 3 1/2 cups chocolate chip brownie mix
  • 1 cup flour
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup 1 stick of butter, melted
  • 1/2 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup mini graham cereal

Instructions

  1. By hand, mix together the brownie mix, flour, eggs, vanilla and butter until well blended, it will be stiff so use a good spoon; I broke a small wooden spoon doing this…lol 
  2. Gently mix in the chocolate chips, marshmallows and cereal and place the cookie batter in the refrigerator to chill for half an hour. 

  3. Preheat oven to 350 degrees 

  4. Drop by large rounded tablespoons onto 2 parchment lined sheet pans

  5. Bake for 12 minutes and let cool completely 
  6. Makes 2 dozen
