Bourbon Butterscotch & Chocolate Chip Blondies with Pecans

Ingredients

  • 1 cup unsalted butter, melted and cooled
  • 1 1/2 cups brown sugar, packed
  • `14 oz can of sweetened condensed milk
  • 3 eggs
  • 1 tbsp instant coffee granules
  • 1 tbsp vanilla extract
  • 1/3 cup bourbon
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp kosher salt
  • 1 1/2 cups butterscotch chips
  • 2 cups semi sweet chocolate chips
  • 1 1/2 cups chopped pecans

Instructions

  1. preheat the oven to 350 degrees

  2. butter and flour or use baking spray a 12 X 18 X 1 inch baking sheet

  3. In a stand mixer or large mixing bowl with a hand mixer, mix together the butter, brown sugar, condensed milk, eggs, instant coffee, vanilla and bourbon on low speed, just until mixed together, do not beat

  4. In another bowl, whisk together the flour, baking powder and salt and mix into the wet ingredients until combined

  5. Add the butterscotch chips, chocolate chips and pecans and mix well

  6. pour onto the prepared baking sheet and spread evenly

  7. Bake in the oven for 20 minutes, take out and rap the baking sheet a few times on the stove-top or counter and return to the oven and bake for another 15 minutes

  8. cool for at least 20 minutes and cut into 20 large or 40 small bars
