You will love my Salmon Sliders, they are so full of flavor and a refreshing change to the standard beef sliders that we all know and love. Party foods are fun, practical and easier to eat then they are small sized, but these are still substantial. Sliders of all kinds are still very popular, believe me…I make hundreds of them for so many events, including weddings! Comfort food at its best, so push that sushi aside for a change and make these fabulous little burgers.
Salmon Sliders
Ingredients
1 lb. of boneless, skinless salmon, cut into large cubes
1 egg
4 green onions, chopped
3 teaspoons grated ginger
½ teaspoon coarse ground pepper
2 teaspoons garlic
3 tablespoons soy sauce
¾ cup of panko bread crumbs
½ cup cilantro, chopped
3 tablespoons vegetable oil for cooking
12 slider rolls or dinner rolls
1 cup of shredded carrots
Handful of arugula
1 English cucumber, sliced
1 tablespoon black sesame seeds
2 tablespoons of Asian vinaigrette
Wasabi Mayo
Ingredients
½ cup of mayonnaise
2 teaspoons wasabi paste (more if you like it hot)
Zest and juice of 1 lemon
Pinch of kosher salt & course pepper
Instructions
- Mix all ingredients together in a small bowl and refrigerate until ready to use
Instructions for Salmon Sliders
- Place all the ingredients through the cilantro for the salmon sliders in a work bowl of a food processer fitted with the metal blade, pulse chop until fine and well mixed together. Empty into a medium sized bowl and with wet hands (makes it easier) form the salmon mixture into 12 equal patties.
- Pour oil into a large frying pan over medium heat and cook the salmon patties for about 5 minutes each side until golden brown and crispy, set aside.
- In a small bowl toss the cucumber slices, shredded carrots and sesame seeds with the vinaigrette
- Cut the buns in half, spread with wasabi mayo, top with salmon, cucumber slices shredded carrots, arugula and black sesame seeds and enjoy! Makes 12 sliders
