Spring is here so I’m thinking about spring menus and entertaining this morning while drinking my third cup of coffee and it brings back memories of a tea party baby shower I did a few years ago. There were many small bites on the menu and among them was a great Chicken Waldorf salad I developed with a delicious orange honey poppy seed dressing. Since it was a “small bites” party and the ladies were wondering around socializing and not seated, I thought of a great way to serve this salad in antique tea cup saucers so not to overwhelm the guests with large portions. This salad is full of fresh crisp fruit and crunch and is so easy to pull together; your guests just might think that you had spent hours in the kitchen.
I so loved the tablescape I created for this tea party, they had a “Mad Hatter” theme, so colors galore was in order
It’s almost too beautiful to eat
Ingredients
1 cup of mayonnaise
¼ cup honey
¼ cup fresh orange juice
Zest of one orange
2 teaspoons Dijon mustard
3 tablespoon apple cider vinegar
3 teaspoons poppy seeds
2 tablespoons minced shallots
¼ teaspoon kosher salt
¼ teaspoon coarse black pepper
3 Cups cooked chicken into cubes
1 cup red seedless grapes cut in half
1 cup green seedless grapes cut in half
1 cup celery, chopped
¼ cup golden raisins
1 sweet red apple, cored and chopped
1 granny smith apple, cored and chopped
1 cup chopped toasted walnuts
Arugula
Serves 6
Directions
- In a large mixing bowl, combine the mayo, honey, orange juice, orange zest, Dijon, vinegar, poppy seeds, shallots, salt & pepper, whisk until well combined
- Add all the remaining ingredients, except the arugula and toss well, cover and chill in the refrigerator for two hours.
- Divide among plates on top of a small mound of arugula and enjoy
Serves 6 or 12 mini portions for a “small bites” party
