Cherry Tomato & Mozzarella “Caprese” Salad Skewers-Joseph Sciascia
Love Caprese Salad? Then why not skewer it and enjoy this portable and refreshing party favorite. This recipe could not be any easier and so quick to put together for an easy and tasty appetizer any time of year. This is practically not even a recipe, so get in that kitchen and start putting food on a stick.
Yield: makes 12 skewers
Ingredients:
24 cherry tomatoes or 1 pint basket of cherry tomatoes
12 leaves from 1 bunch of basil
1 8 oz. container of mini mozzarella cheese balls,-contains about 24 balls
Pinch of Salt and Fresh cracked pepper
Bamboo skewers, at least 4 inches long
Bottle of Balsamic glaze
Instructions:
- Wash and drain cherry tomatoes
- Drain the liquid from the mozzarella balls
- Wash and dry basil and tear individual leaves from stem
- Take a skewer and thread one end of a basil leaf, add one tomato and thread the other end of the basil leaf, so the basil “cradles” the tomato and pushing up a bit on the skewer to allow room for the others
- Add a mozzarella ball to the skewer and one more cherry tomato and then one more mozzarella ball
- Drizzle with balsamic glaze and sprinkle with a pinch of salt and pepper
- Use the extra basil as garnish on the serving platter and/or cut and sprinkle over the top of the skewers
- Serve right away or refrigerate until ready to serve up to 2 hours in advance
