Chicken skewers of all kinds are a party staple and I have served thousands of them at so many parties over the years, I can probably make them in my sleep. Chicken Satay with Peanut Sauce is one of the most popular skewers that I make. I collaborated with my talented sous chef and fabulous friend Paula on this recipe; she is marvelous and an immense help, even though we work so hard at all the events, we still manage to have a great time! We always have fun watching people have a good time at the parties and enjoying the food.
“PJ’s” Chicken Satay with Peanut Sauce
This classic Indonesian recipe for chicken satay is always a party pleaser, especially when dipped into the rich peanut sauce
Ingredients
- 1 cup plain yogurt
- 1 tbsp vegetable oil
- 1 tsp grated ginger, fresh or from a jar
- 1 tsp lemongrass powder or 2 tsp lemongrass paste
- 1 tbsp Sriracha sauce
- 2 tsp minced garlic
- 2 tbsp turmeric
- 1 tbsp yellow curry powder
- 1 tsp kosher salt
- 1/2 tsp coarse pepper
- 1 1/2 lbs skinless, boneless chicken breasts, cut into strips
- 20 wooden skewers, soaked in hot water for 15 minutes
- vegetable oil or spray for the grill
- chopped green onion and crushed peanuts for garnish
Peanut Sauce
- 1 cup smooth peanut butter
- 3/4 cup hot water
- 1 garlic clove
- 1 tsp ginger
- 3 tbsp hoisin sauce
- 1 tbsp Sriracha sauce
- 2 tbsp fresh lime juice
- 2 tbsp dark brown sugar
- 2 tbsp honey
Instructions

Combine yogurt, olive oil and all the spices together in a mixing bowl

Gently combine the chicken and let marinate in the refrigerate for at least 2 hours

Skewer the chicken strips threading it in and out so the chicken stays on the skewer

Brush stovetop grill pan with vegetable oil or spray and over medium heat, grill the skewers for 5 minutes on each side until cooked through and you have nice grill marks on them. Serve on a platter with the peanut sauce on the side, sprinkle the top of the chicken with a pinch of salt and finish off with chopped green onion and crushed peanuts for a garnish if you like
Peanut Sauce

Combine everything into a blender or food processor and blend well until everything is nice and smooth, if it’s too thick, add more water and if it is too thin, add a bit more peanut butter
